5-6 cloves garlic
2 cups spent leaven
3/4 cup buttermilk (or milk)
2 eggs
2 tablespoons butter
1 1/2 teaspoon salt
Fresh dill or basil
Combine all ingredients in Vitamix.
Preheat 12" cast iron skillet to medium. Rub with a stick of butter or spray with olive oil. Pour 1/4 cup batter into skillet, lift and turn to coat; allow to cook until the batter no longer appears wet. Flip and cook another minute or so on the second side to finish. Repeat with remaining batter.
We love these with sauteed cabbage and roasted roots (beets, potatoes, sweet potatoes and onions) as a dinner! Herbs are optional, but our favorite way to enjoy these!
