3 potatoes, grated
12 oz mushrooms, grated or diced finely
4 mini peppers or 1/2 bell pepper, diced finely
1/4 head cabbage, chopped finely
2 ribs celery, diced finely
1 red onion, diced finely
1 can (14.75 oz) wild pink salmon, spines removed (Aldi has this for a good price)
2 eggs
1 cup spent leaven
2 teaspoons salt
Mix all ingredients together in a very large bowl with a Danish dough whisk. Scoop about 1/3 cup onto preheated, greased griddle or cast iron skillet. Cook until crispy on both sides. Be sure to press flat with a spatula, to avoid uncooked potato in the center. We discovered that these are somewhat similar to okonomiyaki, so we have put okonomiyaki sauce on them occasionally to serve!
