3/4 cup butter, soft
1/2 cup honey
2 eggs
1 teaspoon vanilla
2 cups rolled oats
3/4 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons cinnamon (I like blending ceylon and cassia)
1/2 cup freshly milled golden flaxseed
2 cups integral barley flour
1 cup raisins
In a stand mixer with the paddle attachment, cream butter and honey. Add eggs, one at a time, then vanilla, while mixing. Combine dry ingredients, then add to liquids. Once combined, add raisins.
Roll dough into balls, then lightly press. Bake at 350℉ for 12 minutes.
