3/4 cup raw honey
1 cup butter, softened
2 eggs
2 teaspoons vanilla
3 cups integral barley flour
1 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cup chocolate chips
3/4 cup walnuts, if desired
Preheat oven to 350℉. Mix honey and butter well, using a hand mixer or stand mixer with paddle attachment. Add vanilla and eggs, then mix in. Stir in flour, salt, and baking soda. Rest dough once more, about 10 minutes. Barley flour absorbs a lot of liquid (this is why it works so well with honey!), but it needs time in order to not result in a crumbly, sandy cookie. Add chocolate chips and walnuts, if using. Scoop onto sheets lined with parchment and bake for 10-12 minutes.
