Biscuits

 
1 cup cold butter, cut into cubes
5 cups fresh integral flour (khorasan is our favorite!)
1 cup spent leaven
2 tablespoons honey
1 1/2-2 cups buttermilk

2 teaspoons salt
1 tablespoon baking powder
1 1/2 teaspoon baking soda

Cut cold butter into flour, then add leaven, sweetener and buttermilk. Combine to form a single dough mass. Cover and ferment overnight.

8 hours later (depending on room temp; warmer is shorter, colder takes longer): preheat oven to 400℉. Sprinkle dry ingredients over dough, and knead in gently. Turn dough out onto floured surface, and roll to 3/4" thick. Cut 2"-3" biscuits, transfer to parchment-lined baking sheet. Bake for 13-15 minutes.

Truth or Tradition?

 Seven years ago, our family began observing what we call Teshuah . I liked the seven letter word because it filled out my chalkboard calendar nicely. The third week in February, both in 2014 and in 2016, we were delivered out of very difficult situations. The first was a mortgage we couldn't pay for a house we couldn't afford to fix according to HOA standards and a commute we couldn't sustain. We now acknowledge that our difficulties stemmed from idolatry, coveting, and lack of discipline/wisdom. The second, a little house so full of mold that I had not been able to fully breathe in the two years we lived there, ending with a rat in the crawlspace which was only evacuated by a hot water leak that steamed up through a vent straight to the attic, condensing all that water over our belongings, which then molded. what is

contentment? It is a brilliant  gift to be a mother. I have an infant, 10 months old yesterday. She's a strong and very energetic thing; she prefers not to rest. As I sing to her and nurse her to sleep, I hear myself whisper things to her:      "You are so loved."      "You have all that you need."      "You may rest, you will not miss anything that is for you."      "I have more for you.
